Fall Sample Party…Yay!

You may be asking yourself  “What is a sample party?”

Well, hopefully I gave the party a name that gives you a general idea of what to expect.  The culture that surrounds food is fascinating to me. We all need it to survive, yet our culture has found so many different ways to use it. All throughout the day a family unit is separated, but at the end a meal brings everyone together.  It can be a reward or if we abuse it can have consequences (what we eat in private, will be seen later in public!). A single item can have hundreds of different ways to be prepared. The aroma of a dish has nostalgic qualities. Between the science and history of food, you can find that it is always love that goes into preparing food. Somewhere over the last seventy five years or so we started to forget how precious real food is. Our lives became busier with the introduction of technology that promises to do things faster (isn’t that funny?) We have less time to prepare homemade real whole food meals so we compromise and buy a meal-in-a-bag from the freezer at the local grocery store. Pretty soon this becomes the norm. We don’t know what more than 50% of the ingredients are on the back of a box, but we don’t question it either.  In our quest to keep up with all that is expected of us we have settled on food that is fast. Food that doesn’t truly nourish our bodies.  One of the biggest problems food scientists have mentioned is the vast knowledge of how food affects our total well being, but the inability to apply it. We have become smarter about all that makes up food, but still cancer rates rise along with obesity, diabetes, ADHD, celiac disease, down syndrome and many more.  You are here reading this because you have begun to question the true nutritional quality of what you buy.  You have realized that a cereal that boasts to be a good source of Vitamin C has 17g of sugar in one serving and a chemical that is also found in embalming fluid (read here to see that one serving of frosted flakes is actually worse that an ice cream sandwich).  We are so accustomed to buying everything already made for us we forget that we can even make it ourselves!  I’ve heard an argument a few times that goes something like “What’s the point? Your life could end tomorrow in a car accident”. This is true.  Or you could live until 90, feel fantastic and full of energy long past most people do. You could also find yourself in an accident, but survive because your heart was gladiator strong, your immune system resembled the rebels from The Hunger Games and your body stocked with nutrients to replenish itself. You are also an example to your children whom you desire to have a full life and the energy to keep up with it. Don’t let the reasons stop there because your healthy habits affect so many aspects of your life and future generations to come. Not all of us can just drop everything to buy a small farm and become self sustainable though.  And even though there are many healthy options now at the store, sometimes they just lack the quality of homemade goodness.

The sample party will give you an opportunity to taste most of what I have to offer. There will be a few new items that have never been on the menu. Some people buy in bulk because they work a lot, live alone or don’t like to cook.  Some people just keep a few soups or dinners around for emergencies ( the kind that tempts you to stop at a drive thru!).  A lot of people keep their freezer stocked with Espresso Almond Bars because they are just so good. You can’t find anything like them in a store. Some people have even had me do something custom, like a clean low calorie desert for an event. This party is open to anyone interested in eating and living healthier. Don’t feel obligated to buy anything. Just show up to have a good time and meet other people who are striving to eat healthier too.

5pm-7pm  The house will be open for people to come by hang out and try everything. If you already know you want to buy something, but don’t have time to stay then make it quick and easy during this time.  Just come over to chat, drink some cucumber water or a wine spritzer and relax. 

7pm-8pm I will give a little presentation on what makes my food different from what you find in the store, how to take baby steps yourself (like I did!) and give away some prizes. 

8pm-9pm I will have everything you try in stock to buy. You can fill out an order form if you want or take home some food that night. The big news is I can take CREDIT CARDS. Yes, you read that right 🙂

Everyone will walk away with some handouts that include my favorite recipes, simple switches, books/blogs I recommend and healthy living tips.

Back To School Menu 2012

Welcome Back Nourished Foodies!

So far it has been a wonderful summer over here at my humble abode. My kitchen is just as busy as ever since my little tasmanian devils eat every 45 minutes.  There is a lot of back to school buzz from all you loving parents. Between shopping for school supplies, new clothes, lunch boxes and all the things bright and pretty, I bet everyone is feeling a little…busy. If you have the luxury of keeping up with my Facebook posts you’ve seen some great ideas for whole food lunches and snacks. It’s easy to get stuck in the rut of easy lunches like lunchables or the basic sandwich, carrots sticks and apple slices.  I have find myself in these same ruts even with whole foods. I’m quickly knocked out of it when Mav starts coming home with most of his carefully prepared lunch still in tact :/

I’ve created these adorable little muffins to help even the most left brained mom create lunches worthy of Pinterest!  Make these the center of attention in your kids meals or keep them for yourself for a light but filling snack.  Three or four of these should be enough to replace something like a sandwich. These aren’t your usual muffins.  They are mostly made with soaked organic quinoa, a grain like seed boasting a high nutritional value. Known for being a complete protein, quinoa also contains essential amino acids and is high in magnesium and iron (to just name a few of its many amazing qualities).  It is also naturally gluten-free so if you are trying to limit gluten or are sensitive you can request these muffins to be completely gluten-free.  I soak almost all of my grains and legumes (even though quinoa is not technically a grain) to increase the vitamin absorption and ease digestion.  You can read more about soaking here.  The variety of muffins are endless so I’m starting with a large list to choose from until I narrow down people’s favorite.

I was shopping at HEB the other day and saw Lunchables for $1. One Dollar. “WOW” I thought “that is a cheap lunch“.  They must be so tempting to the time starved mom desperate for an easy button.  Yeah, you could feed your kid lunch for a whopping $5 a week, but really think about the fact that what you pay for is what you get. They can charge only $1 a lunchable because that is what it’s worth. Scary. Lunches like that aren’t very filling either. Whole food is more satisfying because it still contains most of the nutrients it was grown with. Your body is not searching for more to fill in the gaps highly processed food leaves behind.  We make room in our budget for better food because everything we do in life is in this body.  I view the extra money on clean brands and a gym membership as an investment in my future health. I love Dave Ramsey’s phrase “Live like no one else so later you can live like no one else”. You can apply it to health also. Eat well today, so you can live well later. I see the living proof in my grandmas. One has lived an active healthy life, raised her kids to garden and worked well into her sixties (maybe longer). After her workplace closed she started working out at a gym just to stay healthy and busy. She is in her early eighties now and watches my own kids weekly! My other grandma (whom I love regardless) allowed food to be an idol. She spent much of her life nose in a book (a great practice in moderation), eating and not taking care of herself. She has had multiple knee surgeries, diabetes, high blood pressure (and on and on)  and takes an arsenal of pharmaceutical drugs everyday. She is dependent on my mother’s care since she can’t drive and getting around is a slow labored process. I love my grandma’s both the same, they both have big loving hearts. When I am of that age though I want to be able to keep up with my great grandkids  and spend my last couple of decades able to take care of myself.  I want to be vibrant and a have lived a life others want to immulate. More than I want that for myself, I want it for my kids. I am not naive enough to think that they won’t make some bad food choices at times when I’m not around, but their foundation will be healthy. They won’t be a hundred pounds overweight at eighteen suddenly realizing that I set them on the path of obesity, but now it’s up to them to do the hard work of losing weight. I want them to question their food and truly understand what they are eating, how it got there and where it comes from.  Hopefully my food can help others feed their kids well too, especially in those moments you just don’t have the time to prepare something. Alright, alright, enough of my preaching and on to some helpful tips.

Baby Steps

  • Start with just an hour. Make a large batch of whole grain pancakes to make breakfast delicious and AB&J’s fun. Here’s a simple recipe to follow.  You can up the ante and create a combination of half whole wheat and half buckwheat, garbanzo bean flour, quinoa flour, sorghum flour, etc.  Don’t worry too much about exact measurements. They will turn out tasty and kids won’t notice if they aren’t perfectly fluffy (you probably won’t either!) I cook these while I cut up veggies or do some other prep that I can stop easily to flip pancakes. Let them cool and store in a gallon ziplock in the freezer. They heat up in the microwave in about a minute! Eventually you’ll be like me and you’ll do this every weekend morning to prepare for the week without even needing to look at the recipe!
  • Don’t let mushy overripe fruit go to waste. As soon as I see fruit get too icky for me to eat raw, I wash, cut and freeze in a bag I keep in the freezer just for smoothies. Or I put them in the dehydrator if it’s the end of the week and we have a bit of fruit that could be dried.
  • We got burnt out on Boar’s Head turkey and ham. I also realized how even though it’s a good brand it’s still pretty processed and contains a lot of sodium. We buy HEB natural chicken tenders (sometimes organic if it’s in the budget) and drumsticks for lunches. I cook all the chicken at the beginning of the week. The tenders are cooked with olive oil in a skillet and the drumsticks (about 6 for less than $3!) are baked (skins removed).  We all eat this for lunch because it’s so versatile. You can make sandwiches, wraps, salads, kabobs and more with them. The drumsticks are fun for the kids (meat popsicle anyone?) and the dark meat is rich in nutrients for their growing bodies.

No mess, hardly any clean up!

  • If you’re trying to switch the kids off dairy, start by serving them glasses with 75% cow’s milk and 25% unsweetened almond, rice or coconut milk.  Then just keep adding more of the alternative milk until they don’t mind the taste
  •  Adding yogurt (choose a responsible brand like Fage, Stoneyfield or Siggi) and fruit to any smoothie will hide the taste of veggies. Organic baby kale or spinach is my favorite green to sneak in. A pricier option is a green powder like Vibrant Green will  greatly enhance the power of the smoothie. Make a large pitcher full and freeze them into pops like this or freeze in portioned glass jars with lids like ball jars (cheap! I like old Kombucha jars) to take out for a smoothie each day.
  • Snap peas, baby carrots, raw orange and red bell pepper, cucumber and celery are my favorite quick and easy veggies I add to just about any lunch. If that’s difficult to start your kid on try switching veggie chips first.
  • Low fat diets are not healthy for kids! Surprised? Well, don’t leave the skin on the chicken just yet. While kids brains are developing they are dependent on EFA’a (essential fatty acids) to build a healthy bright brain. If they are getting artificial fats (ahem, throw out that margarine NOW and get real butter please) then their brain is building itself artificially.  What are good fats? Flaxseed oil, avocados, omega-3 rich fish, walnuts, seeds and more. Read more about why kids need healthy fats here.  Check out this place for the best cod liver oil.  Start your kids early and they won’t mind the taste. Mav thinks his fish oil, vitamin, proibiotic, flaxseed oil concoction tastes great. It doesn’t.
  • My favorite green back to school items are Planetwise reusable washable snack bags, napkins and sandwich bags.  I have their wet bags too and LOVE them. Even if you don’t cloth diaper they are great for swimsuits and to send with kids to put dirty clothes in. I’m hoping to get one of these Planetbox lunch boxes for Mav to replace the current plastic bento box. These are pricey and can be found at Potttery Barn for an even cuter bags to put them in.  My next pick would be Pottery barn’s stainless steel bento boxes because they are leak proof. I like to buy from mom companies, but it’s hard to find a bento box that is leak proof with a silicone lid.  Remember to try to send your kiddos off with reusable silverware. Teaching them how to take care of the earth should start when they are young!

Gluten/Grain free options are available as you can substitute the grain for a legume such a lentils or beans.

Creamy whole cooked Farro topped with lightly sautéed vegetables and 3 oz of all natural baked chicken.

Light and fluffy organic quinoa topped with sautéed squash and flaky white fish (such as cod)

All these dinners can be substituted with legumes or lentils in place of grains for no additional price.  Due to the cooking process these dinners must be ordered in larger quantities. I will notify people when sampler packs are available.  You can also order these sans vegetables to be added to a salad. Most of these dishes taste wonderful cold on a crispy bed of spinach and arugula!

Whole grains and beans have a lot to offer our bodies, but are often ate in too large of portions. They also take a long time to cook and then have to be seasoned right to add flavor and depth. I have soaked my grains and beans overnight in water and kefir to provide your body the best outcome of nutrient absorption.   These are offered in 1/3 cup and 1/2 cup portions seasoned with fresh herbs, spices and in some a bit of creamy greek yogurt and real cheese. They are ready to simply be reheated and added to your dinner.

Spring Menu Coming Soon!

Spring is officially back and with it a fitting menu from Nourished Foods. The green buds and peeking sunshine add a little bounce in my step and hopefully a little pep in my food.  What does spring (and the coming summer) mean for patrons of NF?  Well pretty soon, a lot of the food will be filled with veggies and herbs from our own garden. During the winter I’m stuck with less flavorful dried herbs and buying the fresh ones in the produce isle is outrageous compared to buying a plant.  Finger’s crossed next winter we have  a little greenhouse so I can have fresh herbs all year round. But I’m getting ahead of myself. There are a few new items to the menu and some you’ll see are being put away until fall graces us with it’s presence again. I do have some unfortunate news for some. I will not be doing granola bars anymore. They are just too expensive to make, time consuming and I can’t get them to come out consistently. It takes so much to make so little and I’ve decided to bow out of this challenge until I find a day I’m ready to give them another chance. I know some of you love them, but try the different breakfast bars as I feel they satisfy that craving for granola. I’ll also be updating more frequently since my dear husband surprised me with a laptop for my birthday. Keep a look out for specials and random goods that aren’t on the menu. Sometimes, I am making something for my own family and decide to make a large batch to sell.  It could be something like Organic Homemade Potato Salad. This is not a potato salad like you’ve ever had.  This treat is my own recipe and nothing I’ve ever seen at the supermarket. However, something like this will have one day availability.  So, if you would like to be in the inner circle of those who get notified of one day specials and goods please comment below with your email or just email me.  I will add you to a list of those who are emailed special offers before I announce them on facebook. I’m really looking forward to introducing my new fare in a couple weeks after an updated photo shoot. I’m so excited to unveil my new complete dinner items, all 500 calories or less. *Remember all my soups are made with either my homemade organic chicken broth or a high quality store bought organic chicken broth to deliver the most nourishing macronutrients possible.  Chicken broth is so good for you because the slow process extracts nutrients from the bone marrow you can’t get anywhere else. Maybe this is why chicken soup has been scientifically been proven to shorten a cold even though they can’t explain why!

What’s in store at Nourished Foods

I’m so eager (and nervous) to invite all of you to join us in this adventure as we began Nourished Food’s public venture. If you have been keeping up with our Facebook page the last week then you know a little bit about us already. You may know that the foundation of our company is to feed your body with whole food.  Maybe you ask yourself what does that mean? I realize that I started this project to help out some “time starved”  health conscious friends and family and to earn a little extra cash, but not everyone knows what it means to eat whole. I certainly didn’t a few years ago. Eating whole foods is taking what nature has already made perfect and minimally processing it to make a meal. For example, if a recipe calls for sweetened condensed milk, what do you use? Most people grab a can from their local grocery store. At Nourished Foods, we make our own.  You will have peace of mind knowing that every ingredient will be used at its most natural and whole state. Apples to apples it would look like this: natural salt vs. iodized table salt, arrowroot powder vs. cornstarch, maple syrup vs. corn syrup, fresh produce vs, canned, cooked dry beans vs. canned beans, organic white whole wheat flour vs. bleached white flour. This is what makes our food different from what you will find at the grocery store.  Eating clean takes a lot more energy than we are used to. This wasn’t such a difficult task for those back in the 1800’s or so. There wasn’t the option of natural versus artificial and now we are so accustomed to finding our food in one place we forget to question its origin and primary state. Nourished Foods is giving you the opportunity to have some whole food options around that are simple and quick to prepare for yourself.  The purpose of our blog will be to announce new menu items available, offer tips to adding a little more whole food to your life and a more in-depth look at the why of whole natural foods.  I stay on top of the “Dirty Dozen” ( the produce with the most pesticides found) and make that produce my priority choice for organic.  Our ultimate dream is to be a part of a farmer’s market someday. I would be so overjoyed if you are around to see that first big dream realized. All of you who are here for the very birth of Nourished Foods are so dear to my heart because I feel all the cheers encouraging us on. Thank you all so much for giving up your precious time to give us the little (maybe big?) push we need to get the ball rolling. Every comment, like, share, tweet, or question means a great deal and is always appreciated. My hope for you is that this is also the beginning of your whole food journey as well!
